Fresh Sorrel Salad with Onion

The simplest, lightest, and most delicious! Fresh Sorrel Salad with Onion is made from simple ingredients. Its unique taste comes from the mustard, vinegar, and olive oil dressing. On hot summer days, this salad is a real lifesaver.

Preparation
Step 1
Adjust the amount of greens and cucumbers to your taste. Rinse lettuce leaves, sorrel, young (as I used) or green onion, celery stalk, and cucumber thoroughly.
Step 2
Pat the lettuce leaves dry with paper towels until no moisture remains. What types of lettuce can you use? Romaine, butterhead, lollo rosso, lamb’s lettuce, or iceberg all work well. Tear the leaves into small pieces by hand. Place in a large salad bowl.
Step 3
Pat sorrel dry, remove stems, and cut leaves into wide strips. Slice celery stalk thinly. Add both to the salad bowl.
Step 4
Cut cucumber in half and slice into thin half-moons or quarters. If cucumber is mature, peel it first. Slice the white part of the green onion into thin rings, chop the green part as you like. Red onion also works - it makes the dish look brighter. Add cucumber and onion to the bowl.
Step 5
Make the dressing: in a small bowl, mix apple or wine vinegar with olive (or vegetable) oil. Add mild mustard, garlic powder, and ground allspice. Whisk until smooth.
Step 6
Pour the mustard dressing over the salad.
Step 7
Sprinkle with ground paprika and salt to taste.

Mix well so the dressing coats all ingredients evenly. Done!
Step 9
I usually serve this salad with fish or chicken. It’s light and pairs perfectly with them. Sometimes I serve it as a snack on its own, especially on hot days.
