Fresh Cucumber and Cheese Salad

Simple, quick, delicious, and budget-friendly - perfect for everyday! This fresh cucumber and cheese salad has a spring mood. Juicy cucumbers, layers of cheese with egg whites and yolks, and plenty of herbs give it freshness, pleasant flavor, and a tender texture.

Preparation
Step 1
You can add or substitute ingredients to your taste. Use store-bought mayonnaise or make your own.

Wash and dry the cucumbers. Cut them into small cubes. For a more delicate salad, peel the skin. The amount of cucumbers depends on their size - two large ones are enough, or use 3-4 small ones.
Step 3
Boil the eggs hard (about 10 minutes), cool, and peel them. Separate whites from yolks. Grate whites on a coarse grater, yolks on a fine one. You can grate the yolks directly on the salad for a fluffier texture.
Step 4
Grate the cheese on a medium grater. Any type of cheese works.
Step 5
Wash, dry, and finely chop the dill and green onions. Optionally, add or replace with cilantro, parsley, or a mix of herbs.

You can simply mix all ingredients in a salad bowl, but I prefer layering it using a 14-16 cm (5.5-6.3 inch) culinary ring. First, place the diced cucumber as the bottom layer and drizzle with mayonnaise. I transfer mayonnaise into a piping bag and cut off the tip - easier than using a spoon.
Step 7
Next, spread a layer of grated cheese and drizzle it with mayonnaise. Optionally, you can lightly salt the layers, though I usually don’t - mayonnaise adds enough saltiness.
Step 8
Then add grated egg whites and another thin layer of mayonnaise.
Step 9
Add the next layer - grated egg yolks.
Step 10
Sprinkle with the remaining chopped herbs on top.
Step 11
Before serving, remove the culinary ring and decorate as desired. Enjoy your meal!
