Step 1
Take two medium carrots and one long salad cucumber.
Step 2
Peel the carrots. If the cucumber skin is tough, peel it. Peel the garlic. Rinse all under cold running water and pat dry with a kitchen towel.

Shred the cucumber using a Korean-style grater or cut into thin long strips by hand. Place the cucumber in a colander for 10-15 minutes to drain excess juice.
Step 4
Meanwhile, grate the carrots using a Korean-style grater or a regular coarse grater.
Step 5
Prepare the dressing: in a small deep bowl, combine vegetable or olive oil, soy sauce, and 9% vinegar. Add just under 1 teaspoon of sugar. Press the garlic and add it to the mixture (use 3 small cloves or adjust to taste). Optionally, add paprika, ground black pepper, or other favorite seasonings. Mix thoroughly until the sugar dissolves.
Step 6
Place the carrots in a salad bowl, add the cucumber, and pour the dressing over.

Mix well, salt to taste, cover with plastic wrap, and refrigerate for 30-40 minutes.
Step 8
Before serving, mix again and garnish with fresh herbs such as dill, parsley, or green onions. Ready to serve!
