French Fries Fried in Vegetable Oil

Preparation
Step 1
Use potato varieties with low starch. They usually have a yellowish flesh. Prefer fine salt.

Wash, peel, and cut potatoes into long sticks. Choose uniform, elongated pieces about 3 inches (7–8 cm) long.

Place potatoes in a bowl, cover with cold water, and leave for 10 minutes to remove excess starch.

Drain water and thoroughly dry potatoes on paper towels. Removing all moisture is crucial to avoid oil splatter.

In a small nonstick skillet with a thick bottom or a saucepan, heat vegetable oil with a pinch of salt over medium to medium-high heat. Oil should fully cover the potato sticks. Fry in batches, turning occasionally, until golden brown.
Step 6
Transfer fried potatoes onto paper towels to remove excess oil. Taste and add salt if necessary.
