Freezing Dill for Winter
A wonderfully low-waste food prep. Herbs stay almost like fresh all year round. Freezing dill for winter takes very little time and effort. This method preserves the maximum amount of vitamins, while the dill stays fragrant and keeps its color and flavor.

Step 1
How do you freeze dill for winter in the freezer? Prepare everything you need. Besides the dill, you will need ice cube trays, preferably silicone ones because the frozen cubes are easier to remove, paper towels, freezer bags, or food-safe plastic containers. For preserving, it is best to use mature dill with fleshy stems rather than very young dill. First, rinse the dill well under running water.

Then spread the washed dill out on a paper towel.

Blot the dill on top with a second paper towel.
Step 4
Separate the tough part of the stems from the feathery dill greens, but do not rush to throw the stems away, because they will still be useful.

Finely chop the dill greens.

Place the chopped dill into a special thick freezer bag. Instead of a bag, you can use a plastic container with a lid.
Step 7
Release the excess air from the bag.

Shape the bag into a thin flat block. You can make many such blocks with different herbs and stack them on top of one another. They take up very little space in the freezer. If you like, label the bag with a marker and add the freezing date. After freezing, the herbs stay loose and crumbly. In winter, you can use this dill instead of fresh, for example by adding a few tablespoons to a salad.

I also freeze the dill stems, but in a different way. First, chop them finely. In principle, you do not have to chop them, because later we will blend them anyway.

Pour half a cup of water over the stems.

Blend the dill stems as finely as possible so that no tough pieces remain in the finished mixture.
Step 12
Spoon the dill puree into ice cube trays and freeze it. In the same way, you can preserve not only the stems but also the dill greens. In that case, you will not need a blender. Simply place the chopped dill greens into the trays and pour in a small amount of water.
Step 13
After freezing, remove the dill ice cubes and transfer them to a plastic container or a plastic freezer bag for further storage. In winter, use a couple of these cubes when making soups or sauces. Happy preserving!
