Preparation
Step 1
Before cooking the beef, rinse the meat thoroughly under cold running water. Then place the beef in a pot and cook for 50 minutes. Start over high heat to bring the water to a boil, and once it boils, reduce the heat to medium. Don’t forget to add salt.
Step 2
Rinse the peas very thoroughly until the water runs clear, then soak them for 1 hour. After 1 hour, when the beef has already been partially cooked and the peas are ready, add the peas to the pot and cook for another 1 hour, stirring occasionally. You can also add a bay leaf and spices to make the soup even more flavorful. One more useful tip: before cooking the meat, it’s better to discard the first batch of water and then cook the meat again in fresh, clean water.
Step 3
Cut the onion into small cubes. You can sauté it in a pan, but we won’t do that and will add it as it is. If you have a carrot, you can add it as well. The carrot can also be added without sautéing - the flavor will not change.
Step 4
Rinse the parsley and onion thoroughly under cold running water, then finely chop them. If you have dill, you can add that as well - the more greens, the better and tastier it will be. Chop the green onions finely; in general, try to chop all the herbs as finely as possible.
Step 5
Wash, peel, and cut the potatoes into small cubes. I usually cut them on a board because it’s more convenient and helps achieve the desired size. Add everything to the pot once the peas are cooked - this is after about 1 hour, since the peas are cooked for 1 hour. Add the onion there as well. Stir everything thoroughly so the peas don’t stick to the bottom of the pot.
