Easy
About 20 min.
Preparation
Step 1
Use high-quality flour. Any fat percentage of milk will work. Use large eggs; if they are small, take three. Eggs and milk should be at room temperature, so take them out of the fridge in advance. You can replace or complement paprika with turmeric or other spices to taste.
Step 2
Wash the eggs thoroughly with food-safe detergent, as harmful bacteria may be present even on a seemingly clean shell. Crack them into a bowl and whisk until smooth.
Step 3
Add room-temperature milk to the beaten eggs and mix well.
Step 4
In a separate bowl, sift the flour to aerate it. Add baking powder, salt, and paprika. Mix everything with a spoon. Keep in mind that paprika may give the dough a slightly reddish tint when baked.
Step 5
Gradually add the dry mixture to the milk and whisk until smooth, breaking up any lumps. If needed, add a little more flour. The consistency should be semi-thick and pourable, like heavy sour cream. The filling should remain on the surface without sinking.
Step 6
The yeast-free liquid batter dough with milk for savory pies is ready. Start baking immediately, as letting the dough sit will cause the baking powder to lose its effect, making the dough less airy. Since this dough is unsweetened, use savory fillings such as canned fish, boiled rice with eggs, cabbage, potatoes, chicken, etc. I made a pie with boiled rice, eggs, and herbs. Enjoy your meal!
