Fluffy Zucchini Fritters with Cheese and Herbs

A very quick dish from the most affordable ingredients! A simple recipe for tender fritters made with young zucchini, hard cheese, eggs, and herbs that will surely please many and surprise with their excellent taste!

Preparation
Step 1
First, prepare the necessary ingredients and spices for making tender zucchini fritters with herbs.
Step 2
Take a large grater and deep bowl. Grate about 1.65 lbs (750 g) of young zucchini. If using mature zucchini, peel off the skin and remove the seeds first.
Step 3
Sprinkle the grated zucchini with 1 teaspoon of salt. To help release juice faster, knead them gently with your hands for a short while.
Step 4
Take small portions of zucchini in your hands, squeeze out the liquid thoroughly, and place the drained zucchini into a large bowl.
Step 5
Finely chop about 5 oz (150 g) of green onion and dill (or to taste). Add them to the zucchini, then mix in ½ teaspoon dried garlic, ½ teaspoon khmeli-suneli spice, and ½ teaspoon ground pepper mix.
Step 6
Crack 2 chicken eggs into the bowl, then grate 1.75 oz (50 g) of hard cheese on a fine grater and add to the mixture.
Step 7
Add 5.3 oz (150 g) of wheat flour (sifted through a fine sieve) into the bowl.

Mix all ingredients well and let the zucchini batter rest for 15 minutes.

Heat a frying pan on the stove. Add 3 tablespoons of vegetable oil. Once hot, place 1 tablespoon of batter at a time to form fritters.

Fry on one side over medium heat for 3-4 minutes until golden brown. Flip, cover the pan with a lid, and fry until fully cooked on the other side.
