Fluffy Yeast Pancakes with Sour Milk

Preparation
Step 1
Sift the flour in advance to enrich it with oxygen. This will help the batter rise better and make the pancakes fluffier. The sour milk and water should be warm or at room temperature.

Pour warm water into a small bowl. Add sugar and dry yeast. Mix and let sit for 10–15 minutes. The yeast will activate, and bubbles will appear on the surface.

Then pour the sour milk into a mixing bowl and crack in the egg. Mix everything with a whisk. Wash the egg with baking soda beforehand to eliminate any harmful bacteria.

Add a pinch of salt and vanilla. Gradually add the sifted flour, stirring it into the batter. You may need a bit more or less flour than stated—focus on the consistency of the batter.

The finished batter should be thick, smooth, and lump-free. Cover the bowl with a towel and leave it in a warm place for 30–40 minutes to rise.

After some time, the batter will increase in size. Do not stir it!

Scoop the batter gently from the edge with a spoon, without mixing it. Try to keep its fluffiness intact.

Heat a skillet and add a little vegetable oil. Spoon the batter onto the skillet. Cook on low heat for 1–2 minutes per side. They should be cooked through inside.

The pancakes should become golden brown on both sides.

Remove the pancakes from the skillet and place them on a paper towel to absorb excess oil. Serve with jam, sweetened condensed milk, or sour cream. Enjoy!
