Fluffy Yeast Buns with Milk

Tender, airy, golden, and fluffy! Perfect for family tea time. These yeast pastries are made with milk and a light dough that rises quickly. They can be filled with any sweet fruit or berry filling, or made savory by reducing the sugar.

Preparation
Step 1
Use neutral vegetable oil. Any milk fat content works. Vanilla sugar can be replaced with a pinch of vanilla powder.

Sift the flour into a large deep bowl. This enriches it with oxygen, helping the dough rise faster and making pastries light and airy.

Warm the milk slightly. In a small bowl, mix yeast, 1 tsp sugar, and about 70 ml (≈ ¼ cup) of milk. Stir well and leave for 10-12 minutes to activate. A foamy “cap” on top means good yeast. If it doesn’t appear, replace the yeast.
Step 4
In a large bowl, beat the egg with sugar, salt, and vanilla sugar.

Add the remaining warm milk and stir.

Add the activated yeast mixture and stir lightly.

Pour in vegetable oil and mix.

Add about ¾ of the sifted flour. Do not add all at once - you may need less. Too much flour cannot be fixed, too little can be adjusted. Stir first with a spoon.

Gradually add the rest of the flour in small portions, kneading with hands. Focus on dough texture, not flour amount.

Knead until soft, elastic, and almost non-sticky. Cover with a towel and leave in a warm place for 70-80 minutes. Rising time varies depending on room temperature and yeast activity.

Prepare filling. Example: apple with cinnamon and sugar. Choose sweet or sweet-tart apples, not too hard. You can also use berries, jam, or preserves.

Wash, dry, peel, and core apples. Dice into small cubes.

Mix diced apples with sugar and cinnamon. Adjust amounts to taste.

The dough should have risen about 2.5 times - ready for shaping.

Gently knead, transfer to a floured surface. Divide into equal portions (depends on desired size). Roll each into a ball. Cover balls with a towel.

Roll each ball into a round flat circle.

Place filling in the center.

Fold edges over filling and pinch closed. Shape as desired.

Place pastries on a parchment-lined baking sheet, leaving space between them (they will rise). Cover with a towel and let rest 15-20 minutes.

Lightly beat an egg with a little milk for brushing.

Brush pastries with egg mixture.
