Step 1
How do you make fluffy lean pancakes on water without yeast? Prepare all the necessary ingredients. Use all-purpose flour. Warm the water beforehand until it is lukewarm. It should not be too hot, otherwise the flour will cook and the batter will not turn out airy.
Step 2
In a bowl, combine the warm water, sugar, and vanilla sugar. Quickly whisk everything until the sugar dissolves. Vanilla sugar can be replaced with vanilla extract or vanilla powder.
Step 3
Pour in the lemon juice and stir again. You can replace the lemon juice with a pinch of citric acid dissolved in 1 tablespoon of water. If you do not have citric acid, regular apple cider vinegar will work. You will need 1 teaspoon.
Step 4
Sift the flour together with the baking soda and salt directly into the bowl with the warm water and sugar. Quickly mix the batter with a whisk, breaking up all the flour lumps. Do not mix for too long. As soon as all the flour is fully moistened, leave the batter to rest for 5 minutes.
Step 5
If the batter is mixed correctly, small bubbles will appear in it. This means that an acid-base reaction has taken place between the lemon juice and the baking soda, releasing carbon dioxide into the batter. Thanks to this reaction, the batter will become airy and the pancakes will puff up during frying.
Step 6
Heat a little vegetable oil in a frying pan over medium heat. Spoon the batter into the pan, forming small round pancakes and leaving a little space between them so they do not join together while cooking. Fry the pancakes on both sides over medium heat until golden brown. As they cook, they will become puffier and airier.
Step 7
Transfer the finished pancakes to a plate and serve. You can serve them with honey, preserves, melted chocolate, chocolate-hazelnut spread, or jam. They are also delicious with fresh berries. Enjoy your meal!
