Fluffy Sour Yeast Pancakes

Preparation
Step 1
First, prepare the required ingredients. Use high-grade wheat flour. Check the yeast packaging — you’ll need yeast that dissolves in liquid, in this case, milk. Use refined, odorless vegetable oil for frying.
Step 2
In a bowl, combine warm milk (98–104°F / 37–40°C), salt, sugar, and yeast. You can whisk it, or just sprinkle the yeast evenly over the milk. Let it rest in a warm place for 10–15 minutes to activate the yeast. A foamy cap should appear on top — that means the yeast is working. If not, use a different yeast, as the dough won't rise properly.
Step 3
Sift in the flour and mix the dough thoroughly. You may need more or less flour depending on consistency.
Step 4
The batter should be semi-thick, smooth, and lump-free.
Step 5
Cover the bowl with a towel and let the dough rise in a warm place for 1.5 to 2 hours or more. It will expand significantly. The dough should have a sour aroma. You can also let it ferment overnight — just be sure to use a large enough bowl to prevent overflow.
Step 6
Preheat a small amount of oil in a skillet over medium-low heat. Use a spoon to drop small rounds of batter into the pan. Fry on both sides until golden brown.

Transfer the ready pancakes onto a plate and serve with fresh fruits. Enjoy!
