Fluffy Pancakes with Apple Filling
Fluffy, airy pancakes with a delicious filling. These fluffy pancakes with fruit filling are very tasty. Children especially enjoy them. You can eat them any time: for breakfast with tea or coffee, for lunch with juice or compote, and for dinner or before bed with milk. They are also suitable for those following a gentle diet.

Step 1
Crack 2 fresh chicken eggs into a bowl.
Step 2
Add 2 tablespoons of sugar to the eggs and mix.
Step 3
Add a little salt, about 1/2 teaspoon, and mix again.
Step 4
Next, pour in 1 cup of kefir, about 200 ml, about 6.8 fl oz. Mix everything well.
Step 5
Add vegetable oil to the bowl. I used 2 tablespoons of sunflower oil. You can also use olive oil or clarified butter.
Step 6
Add 1 packet of baking powder, or 10 g, about 2 tsp.
Step 7
Add a little less than 1 cup of flour, or 136 g, about 4.8 oz.
Step 8
Mix everything until it reaches the consistency of thick sour cream.
Step 9
Then fry the pancakes on a hot skillet on both sides. Pour in 1 ladleful of batter and spread it evenly over the skillet in a thin layer.

For the filling, dice 200 g, about 7 oz, of apples.

Also dice 180 g, about 6.3 oz, of banana.

Put 15 g, about 1 tbsp, of butter into a heated skillet.
Step 13
Cook the apples over low heat until moderately soft. This takes about 10 minutes.
Step 14
Add 3 teaspoons of honey and turn off the heat.
Step 15
Add the banana to the cooling skillet and mix everything together.
Step 16
At the end, add 3 tablespoons of powdered sugar.

Spread 2 tablespoons of the finished cooled filling onto each pancake and roll it into a tube.
