Fluffy Oven-Baked Yeast Buns (Milk Dough)
Golden, fluffy milk buns that are great with any filling. Quick and easy - even beginners can do it! The dough is made with milk and dry yeast, so the pastries turn out soft, tender, and airy. All that’s left is to choose a filling you like.

Step 1
How to bake fluffy yeast buns from milk dough? We’ll make the dough using the fastest method I know, and it works great. Sift flour into a bowl, add yeast, sugar, and salt, then pour in warm milk and melted butter, and crack in the egg. You can heat the milk to 140°F (60°C) and dissolve the butter in it - by the time you mix, the milk will cool to about 104°F (40°C), saving even more time.
Step 2
Knead the dough with a mixer fitted with dough hooks on speed 1. It took me 1.5 minutes. The dough turned out soft and pulled away from the sides of the bowl well. Kneading is done.
Step 3
Transfer the dough to a bowl greased with vegetable oil, cover with plastic wrap, and leave in a warm, draft-free place for 40 minutes to rise. I usually place the dough near a lit stove.
Step 4
After the allotted time, the dough should rise well.
Step 5
Turn it out of the bowl and divide into 6 equal pieces. I pinched off pieces and weighed them on a kitchen scale - each one was about 65 g. You won’t need flour.
Step 6
Flatten each piece by hand into a small round, add the filling, and pinch the edges closed, shaping a rectangular bun. I used a ground-meat filling, but any filling works with this dough - savory or sweet: braised cabbage, liver, meat, mushrooms, rice, curd, fresh berries, jam, apples, etc.
Step 7
Place the shaped buns on a baking sheet lined with parchment paper - no need to grease it. Loosely cover with plastic wrap and let proof for 15 minutes.
Step 8
Remove the wrap and brush the buns with a mixture of egg yolk and milk.
Step 9
Bake at 350°F (180°C) for 15-20 minutes, until nicely browned. Enjoy!
