Fluffy Oven-Baked Kefir Hand Pies
Soft, airy, made from simple ingredients, and incredibly delicious! Oven-baked hand pies made with kefir dough are very quick to prepare because they contain no yeast, so there is no need to wait two hours for the dough to rise. They can be made with any filling, and the dough turns out as soft as a cloud.

Step 1
How do you make fluffy oven-baked kefir hand pies? First prepare the dough. How do you make the dough? Pour room-temperature kefir into a deep bowl, add the salt and sugar, and mix. Kefir of any fat content will work.
Step 2
Sift the flour through a fine sieve, this will aerate it and make the baked goods fluffier. Add the baking powder to the flour and mix thoroughly several times.
Step 3
Add the vegetable oil, refined and odorless, to the kefir. Mix well.
Step 4
Gradually adding the flour to the kefir and oil mixture, knead the dough. Be prepared that you may need a little more or a little less flour than stated in the recipe. Focus not on the exact amount of flour, but on the desired consistency of the dough. It should turn out smooth, elastic, and soft. Gather the dough into a ball and cover it with plastic wrap or a kitchen towel. Leave it at room temperature for 30 minutes.
Step 5
Divide the finished dough into 12 pieces, shaping them into dough balls.
Step 6
Shape the hand pies in the usual and most convenient way for you. Take 1 dough ball, roll it out with a rolling pin into a flat round, place the filling in the center, and pinch the dough together over the top, enclosing the filling inside. To keep your hands and the rolling pin from sticking to the dough, you can dip them in flour from time to time. I suggest making the hand pies with a braided seam on top.
Step 7
Place the hand pies on a baking tray lined with parchment paper. To make them nicely golden, brush the tops with egg yolk. If the yolk is too thick, add 1 teaspoon of milk. Preheat the oven to 180°C (350°F) and bake the hand pies for 20-25 minutes, until golden brown. The exact time will depend on your oven. Cool the finished hand pies and serve. Enjoy your meal!
