Fluffy Kefir Sponge Cake in the Oven for Cake

Preparation
Step 1
Be sure to sift the flour to aerate it. Take chicken eggs and kefir out of the refrigerator in advance so they come to room temperature.

Mix flour, baking soda, and baking powder. Stir well.

In a separate bowl, crack three eggs, add sugar (or a heat-stable sugar substitute), and beat with a mixer at medium speed for about 10 minutes. The egg mixture should become pale and thick. Add refined vegetable oil and kefir (slightly warmed is recommended). Continue beating until smooth and bubbles appear on the surface.
Step 4
Add all the flour mixture at once. Flour quality may vary, so the amount might need slight adjustment. Adjust to desired consistency.
Step 5
Beat the batter with a mixer at medium speed. The consistency should be smooth, homogeneous, like thick sour cream. Leave the batter for 5 minutes in a warm place to activate the baking soda.
Step 6
Line a cake pan (18 cm diameter) with parchment paper. Grease the bottom and sides with butter to prevent burning. Optionally wrap the outside of the pan with foil. Pour the batter in and level the surface with a silicone spatula.
Step 7
Cover the batter with foil. Place the pan in a preheated oven at 356°F (180°C). Bake for about 1 hour. Oven times vary, so check doneness with a dry wooden skewer or toothpick. If it comes out clean, the cake is ready. Remove the pan and let it cool for 5 minutes. Release the cake from the pan and cool completely on a rack.
Step 8
The ready kefir sponge cake can be wrapped in cling film and left for a day. This prevents it from crumbling when cut. Slice into 2-3 layers and fill with your favorite cream, e.g., sour cream cream. Or dust generously with powdered sugar and serve for tea - delicious. Enjoy!
