Fluffy Kefir Pancakes with Baking Soda and Eggs

Always fluffy, thick, and soft, even when cooled! Our family loves these soda-based pancakes. Fragrant and tasty - perfect for tea time or breakfast! A simple dish with its own secrets that will turn out great for everyone. You can also add apples, raisins, or cinnamon.

Preparation
Step 1
All ingredients should be at room temperature. Take the egg and kefir out of the fridge in advance. If you forgot or are in a hurry, place the egg in warm water for 5 minutes, then dry it. Any fat percentage of kefir works, I usually use 2.5%.
Step 2
Weigh the needed flour and sift it into a separate bowl - this enriches it with oxygen and removes debris. Measure flour loosely in a cup, then sift. This way you’ll get the right amount.
Step 3
Crack the egg into a large bowl, add a pinch of fine salt, sugar, and vanilla sugar. Adjust sugar amount to taste. Whisk gently until smooth (no need to beat heavily). A whisk works better than a fork.
Step 4
Even if the kefir is at room temperature, warm it slightly on the stove or in the microwave until it just starts to bubble but doesn’t curdle. Heat in 30-second pulses - usually 1 minute is enough.
Step 5
Stir the kefir with a whisk, then slowly pour it into the egg-sugar mixture while whisking continuously. Mix until smooth.
Step 6
Add the sifted flour in 2-3 parts. I add about 2 heaping tablespoons at a time, whisking in one direction until smooth. The exact amount may vary depending on flour.
Step 7
The batter should be thick: it should slide slowly off a spoon, not run freely. If too liquid - add flour; if too thick - add kefir. Adjust carefully.
Step 8
Sift baking soda over the batter. This avoids clumps. Mix thoroughly with a whisk.
Step 9
The kefir reacts with soda, releasing carbon dioxide bubbles that make the batter airy. Soda also lightens the texture, making it easier to spoon out. If adding raisins, apples, or cinnamon, do it now.
Step 10
Cover the bowl and let the batter rest for 12-15 minutes until bubbles appear. Don’t stir after resting - scoop gently from the edge with a spoon.
Step 11
Heat a frying pan, pour in refined sunflower oil, and warm it up. Reduce heat to medium-low. Dip a spoon in oil, scoop batter, and place it on the pan. Fry until golden underneath and bubbles appear, then flip.
Step 12
Flip with forks or a spatula carefully, away from yourself to avoid burns. Add a little oil as needed. Adjust heat if necessary so they cook evenly (golden outside, cooked inside).
Step 13
Place ready pancakes on paper towels to absorb excess oil.
Step 14
These kefir pancakes with egg are moderately sweet, fluffy, and best served with sour cream, condensed milk, jam, or tea. Makes enough for 4 people for breakfast.
