Fluffy Kefir Pancakes in a Skillet

Step 1
I use kefir with 3% fat, but any type will work. To make the pancakes fluffy, all ingredients should be at room temperature. You can slightly warm the kefir in the microwave.

For the batter, take a large, comfortable bowl. Crack in the egg, add sugar and salt. Adjust the sugar amount to your taste. Whisk the mixture slightly until smooth.

Then stir in the prepared kefir.

Sift flour with baking soda to aerate it. Gradually add the flour into the bowl while mixing. Adjust the flour quantity to reach the right consistency - you might need a little more or less.

The finished batter should be quite thick and slowly drip from the whisk.

Pour some vegetable oil into a hot skillet. Spoon the batter onto it (it should be thick and hold its shape). Cook the pancakes over medium heat for 2-3 minutes on each side until golden. (≈ 350°F / 175°C). The exact temperature may vary depending on your pan and stove.
Step 7
Cooking them slowly helps them rise well and cook through inside. When golden brown, transfer to a paper towel for 30 seconds to absorb excess oil, then remove to prevent sticking.

Your fluffy kefir pancakes are ready! Serve them warm with jam, condensed milk, or sour cream. Enjoy!
