Preparation
Step 1
Prepare the necessary ingredients. You can use one apple variety or several. The main thing is that the apples are tasty, fragrant, and juicy. Use large eggs. If the eggs are small, it’s better to take 1 more. Preheat the oven to 180°C (356°F). Adjust the amount of sugar to taste.
Step 2
Beat the eggs with a mixer until a light foam appears. Then add the sugar in small portions and keep beating until fluffy, for 3-5 minutes. To check, run a spatula through the mixture: if the line stays for 1-2 seconds, the eggs are whipped correctly. If it disappears instantly, keep beating. It’s important not to overdo it. There should be small bubbles on the surface.
Step 3
Sift the flour together with the baking powder into a separate bowl. Sifting is necessary - it aerates the flour and makes the batter lighter. If you have time, sift the flour twice.
Step 4
Continuing to beat the eggs on low speed, add the sifted flour in parts. You may need a little more or less flour - watch the consistency. If you beat on high speed, the batter may deflate and lose airiness. You can also fold in the flour with a spatula, but the mixer will combine it more evenly.
Step 5
The batter should be like thick sour cream. At the same time, it should still contain air bubbles, though not as many as before adding the flour.
Step 6
Wash the apples, peel them, remove the cores, and cut into medium pieces. I didn’t peel mine because the skin is thin.
Step 7
Add the prepared apples to the batter and gently fold with a spatula. Line a 20-22 cm (8-9 in) pan with parchment and butter the bottom (but not the sides!). Pour the batter into the pan and level it. If desired, sprinkle the top evenly with a thin layer of sugar.
Step 8
Bake the charlotte in the preheated 180°C (356°F) oven for about 40-50 minutes. Do not open the oven door for the first 25 minutes, or the cake may sink. Check doneness with a wooden skewer - it should come out dry. Exact time and temperature depend on your oven.
Step 9
Serve the charlotte warm with tea or coffee. Dust with powdered sugar through a sieve. A slice can be topped with a scoop of vanilla ice cream or whipped cream. It’s also great with sour cream or hot chocolate. Enjoy your meal!
