Fluffy Donuts with Kefir

A popular homemade pastry, loved for its simplicity and reliable result. Unlike yeast ones, these are quick to make but remain just as airy.

Step 1
How to make fluffy kefir donuts without yeast, fried in oil? Prepare all ingredients. They should be at room temperature. Use kefir of any fat content, or replace it with buttermilk. Melt the butter in any convenient way.

Crack an egg into a bowl.

Add sugar and vanillin (or vanilla sugar).

Pour in the kefir.

Add warm melted butter, salt, and baking powder.

Quickly and thoroughly mix everything.

Sift the flour - this oxygenates it and helps the dough be soft and airy. Add flour gradually, adjusting to desired dough consistency. You might need slightly more or less depending on flour quality.

The dough should be soft and slightly sticky. When rolling out, use minimal flour so the dough doesn't become dense. Roll it to a thickness of about 0.6 inches (1.5 cm).

If you don't have a donut cutter, use a glass. Lightly dip it in flour and cut out small circles.

Use a smaller item (like a piping nozzle or small shot glass) to cut a hole in the center.

Heat vegetable oil in a skillet over medium heat. Place the donuts into the hot oil. The temperature is right when a small piece of dough floats up immediately and bubbles appear.

Once the donuts turn golden brown, flip them with a fork or spatula to fry the other side.

Transfer to a paper towel-lined plate to absorb excess oil. Donuts are ready. Enjoy!
