Preparation
Step 1
Prepare all the ingredients listed in the recipe. If your flounder is frozen, thaw it first. For two servings, use two medium-sized fish. Peel the onion. Rinse the tomatoes, onion, and lemon. Preheat the oven to 350–390°F (180–200°C).
Step 2
Gut the flounder, remove the fins and tail with kitchen scissors. If desired, cut off the fish heads, but I prefer to bake them whole for a more appetizing look. Wash the fish thoroughly and pat dry with paper towels. Season with salt, pepper, and your favorite spices, rubbing them evenly on both sides.
Step 3
Place half of the sliced onion (cut into thin half-rings) on a sheet of foil. I used red salad onion, but regular yellow onion works too.
Step 4
Lay the flounder on top of the onions, white side down. Drizzle with lemon juice.
Step 5
Slice the tomatoes into thin rounds and place them on top of the fish. Usually, one tomato is enough for one portion.
Step 6
Cover the fish with another sheet of foil, sealing the edges tightly to create a foil packet.
Step 7
Place the foil packet in a baking dish or on a baking sheet.
Step 8
Bake in the preheated oven for about 30 minutes at 350–390°F (180–200°C). Baking time may vary depending on your oven model.
Step 9
Carefully open the foil packets (be cautious of hot steam) and bake for another 15–20 minutes, until the flounder develops a golden crust.
