How do you make a flatbread roll with tomatoes and cheese? Prepare all the ingredients for the filling. It is best to use soft processed cheese spread in tubs, as it is easier to spread over the flatbread. In addition to dill and parsley, you can also add green onion tops, cilantro, or other herbs. You can replace the herbs with leaves of any green lettuce, such as Iceberg or Frillice.

Wash the tomatoes, dry them, and cut them in half. To keep the moisture from the tomatoes from making the whole flatbread soggy, it is best to cut out the center with the seeds. Dice the flesh into small cubes. It is better not to cut the tomatoes too large, because they may tear the roll when you shape it. For the filling, choose meaty tomatoes with more flesh and less juice.

Grate the cheese on a medium or fine grater. You can use any cheese, the main thing is that it should be fresh and made without vegetable fats.

Wash the dill and parsley under running water, dry them with paper towels, and chop them finely.

Lay the flatbread sheet on the work surface and spread it evenly with the processed cheese spread. For a more piquant flavor, you can add garlic passed through a press, 1-2 cloves, to the cheese spread and mix it first. Only then spread it over the flatbread.

Mentally divide the flatbread into 3 equal parts. Sprinkle 1 third of it with the tomato pieces. Sprinkle the second third with the grated cheese. Sprinkle the last third with the chopped herbs. You can also mix the entire filling in a bowl and distribute it evenly over the whole flatbread.
Step 7
Roll the flatbread tightly, starting from the side with the tomatoes, so that all the tomatoes stay in the center of the roll. In that case, the tomatoes will not soak the whole flatbread, only the very center.
Step 8
Wrap the finished roll in plastic wrap or a plastic bag and place it in the refrigerator for 1-2 hours so it can absorb the flavors.
Step 9
Remove the chilled flatbread roll with cheese and tomato filling from the wrap, cut it into portion pieces, and serve. If you wish, you can heat the roll for a few minutes in the microwave or bake it briefly in the oven. Then the cheese will melt, and the roll can be served hot. It will taste similar to a vegetable shawarma without chicken. Enjoy your meal!
