Preparation
Step 1
Prepare the necessary ingredients. Choose ripe apricots, but not ones that are falling apart. Make sure the fruit has no damage. Wash the apricots well under running water and place them in a colander so the water can drain off, or dry them with napkins or paper towels. You can use more or less sugar than listed depending on the sweetness of the apricots and your taste preferences.
Step 2
Choose an enameled or glass pot. Do not use an aluminum one, because the metal will react with the fruit juice, and harmful chemical compounds may be released into the jam. Divide each apricot into two halves and remove the pit. You can leave the apricots in halves, or cut each half again in half. I cut them into quarters. Put the cut apricots into the pot.
Step 3
Sprinkle the cut apricots with sugar and shake the pot a little so the sugar is distributed more evenly. Do not add all the sugar at once, use a little more than half of the listed amount. You can add the remaining sugar later. Cover the apricots with sugar using a lid or towel and leave them for several hours so they release their juice. I usually leave them overnight.
Step 4
After a few hours, when a lot of juice has appeared, you can start cooking. Put the pot on the heat and bring everything to a boil together. Taste it. If it is not sweet enough, you can add more sugar. Simmer the apricots for 5 minutes over low heat.
Step 5
If foam forms during cooking, it should be removed, because the foam collects impurities from the sugar and fruit, and it can reduce the storage life of the jam and noticeably worsen its taste and color. Even though the jam cooks for only 5 minutes, the apricots still have time to soften a little.
Step 6
Wash them well under running water with baking soda. Place the jars upside down in a cold oven, turn it on to 150°C (300°F), and sterilize 0.5 L jars for 10 minutes and 1 L jars for 15 minutes. You can also do this in the microwave or over hot steam. Simply pour boiling water over the lids.
Step 7
Pour the hot jam into the prepared jars and close them with lids. Turn the jar upside down and check that it is sealed tightly. Wrap the turned jars in a warm blanket and leave them that way until completely cool. Why wrap them in a warm blanket? When wrapped, the jam stays hot for a long time, which means it continues to settle during cooling. During this time it becomes even thicker and tastier.
Step 8
Store the cooled jars of jam in a cool place, in the refrigerator or cellar. Enjoy your winter tea time!
