Fish with Vegetables in a Frying Pan

Very tasty, incredibly juicy, and quick to prepare! Fish with vegetables in a frying pan is simple to cook and absolutely delicious! Perfect for a festive table or a romantic dinner with a glass of white wine.

Preparation
Step 1
If using frozen fish, remove it from the freezer in advance and let it thaw completely at room temperature. Gut, scale, and remove head and tail. Trim the fins.
Step 2
Rinse trout under cold running water and pat dry with paper towels. Cut into 1-1.5 cm thick steaks. Lightly salt both sides.
Step 3
Peel the onion. Halve the bell pepper, remove seeds and core. Rinse all vegetables. Cut the pepper into thin strips, dice the onion, and leave cherry tomatoes whole or halve them. You can peel the tomatoes if desired.
Step 4
Heat a small amount of vegetable oil in a frying pan. Adjust oil as needed. Sauté the onion and bell pepper on high heat, stirring constantly, until the onion turns golden.
Step 5
Add cherry tomatoes to the pan. Season vegetables with salt and preferred spices. I used a pinch of dried garlic, some Herbes de Provence, and a vegetable seasoning mix. Cook while stirring for about 2 minutes. Remove vegetables from the pan to a separate plate.
Step 6
Reduce heat to just below medium. Place trout pieces in the pan where vegetables were cooked. Cook 5-7 minutes on one side, then flip and cook another 5-7 minutes until done.
Step 7
Layer the fried vegetables over the trout, cover the pan, and leave for 2-3 minutes.
Step 8
Sprinkle the finished dish with ground pepper and finely chopped herbs.
Step 9
Delicious served hot or cold.
