Step 1
Prepare the required ingredients. Fish heads do not contain much meat, so fish tails are often added to the soup as well. However, most of the rich flavor is concentrated in the broth, and the heads provide plenty of it. You can use the heads of any other salmonid fish instead of salmon.
Step 2
Rinse the fish heads thoroughly, remove the gills and cut off the fins. Make sure no small fragments or blood clots remain, as they can affect the clarity of the broth.

Place the fish heads, a whole peeled onion and the allspice berries in a saucepan.

Pour in the cold water and place the saucepan over low heat.
Step 5
Peel and rinse the carrot. Cut it into small cubes or grate it coarsely.

Peel the potatoes and cut them into medium-sized cubes.
Step 7
Once the broth comes to a boil, cook it over low heat for about 40 minutes, occasionally skimming off any foam that rises to the surface. Remove and discard the onion when the broth is ready.

Remove the fish heads from the broth and separate the meat from the bones.

Strain the broth, return it to the heat and bring it back to a boil.

Add the potatoes and carrot to the broth. Cook over medium heat for about 15 minutes, or until the potatoes are tender.

Add the fish meat and bay leaf. Season with salt to taste. For an even clearer broth, you may add 1–2 tablespoons of vodka. Cook the soup for another 10 minutes. You can also stir in a small piece of butter at the end, although the soup may already be rich enough without it.

Turn off the heat, cover the saucepan with a lid and leave the soup to rest for about 10–15 minutes.
