Fish Quenelles
Very tender and diet-friendly - goodness in every bite! Fish quenelles are softer than regular patties. They are perfect for diet and kids’ menus and will appeal to those who follow healthy eating. You can also cook them in a steamer.

Preparation
Step 1
Any fish will work. I used pollock, first cleaning it from skin and bones. Of course, you can take ready fish fillet. If the fish is frozen, thaw it in the refrigerator in advance.
Step 2
Soak the crumb of a baguette or white bread in cream. If you want a more diet-friendly version, you can replace the cream with milk or water.
Step 3
I used a blender to make the mince. You can also prepare it with a meat grinder. Cut the fish fillet into small pieces and put them into the blender. Blend until smooth. I divided the fillet into two batches.
Step 4
To the remaining fillet add the bread crumb soaked in cream and the egg. Again, blend with the blender until you get a smooth fish mince.
Step 5
Put the fish mince into a bowl; you can add finely chopped herbs if you like. Season the mince with salt, optionally add spices, and mix well. The consistency of the mince will be not very thick, slightly sticky. It will also depend on the quality of the fish fillet. The mince should not be too runny. If it is too wet, add 1-2 tablespoons of flour to make it thicker. My mince had a medium consistency, so I didn’t add flour.
Step 6
It is convenient to shape the quenelles with a tablespoon. In this case they will have an elongated, oval shape. Scoop some mince with a spoon and press it with another spoon on top. You can also make the quenelles round.
Step 7
Bring water in a pot to a boil and lightly salt it. Drop the quenelles from the spoon into the pot. For a test, you can cook just one quenelle first. If it starts to break apart a little, thicken the mince with flour as described above.
Step 8
Cook the quenelles at a very gentle simmer for about 10 minutes.
Step 9
Remove the quenelles with a slotted spoon and place them on a plate. I got 17 small quenelles.
Step 10
Serve the fish quenelles with fresh or stewed vegetables, or with a side dish of grains, potatoes, or pasta. They go perfectly with béchamel, sour cream sauce, or tomato sauce. Enjoy your meal!
