Preparation
Step 1
Use any red fish: trout, pink salmon, salmon, sockeye, etc. Alternatively, use any white sea or river fish. If frozen, thaw properly on the bottom shelf of the refrigerator.
Step 2
Wash, dry, and finely chop parsley. Optionally, replace or add other herbs like dill, cilantro, or a mix of herbs.
Step 3
Wash and dry fish steaks. For a whole fish, gut, rinse, and cut into portioned steaks of ~160 g each. You may also use boneless fillets.
Step 4
Grease a baking dish with butter. Place fish steaks, season with salt and pepper. Optionally add your favorite spices or pre-mixed fish seasoning. Check pre-mixed seasoning labels as they often contain salt.
Step 5
Place pieces of butter on top of the fish.
Step 6
Pour white wine over the fish and sprinkle with chopped herbs. Bake in a preheated 180°C (356°F) oven for 15-20 minutes depending on steak thickness. Do not overcook, especially for lean fish like pink salmon. Stay nearby to prevent drying.
Step 7
Plate the fish and drizzle with the sauce from the baking dish. Enjoy!
