You can add onions sautéed in vegetable oil to the mixture, as well as any herbs to taste. To make the patties fluffy, you can separate the egg white from the yolk and beat it into a thick foam with a mixer. Add the beaten white into the fish mixture at the very end, after all the other ingredients.
Preparation
Step 1
Use any canned fish you like; I used sardines. It’s best if they're in oil or their own juice (not tomato sauce). Round rice is preferred. Wash the egg and dry it with a napkin.
Step 2
Rinse the rice several times until the water runs clear. Transfer to a pot, add water, and cook until done. Add salt to the water. Use 2–3 times more water than rice. Drain the cooked rice in a colander and let it cool.
Step 3
Drain the liquid or oil from the canned fish. Take the fish out of the can and let the excess liquid drip off. If there are large bones, remove them. Place the fish in a deep bowl.

Mash the fish with a fork.

Add the cooled rice to the mashed fish. Crack in the raw egg. Add salt and pepper to taste.
Step 6
Mix everything until homogeneous. If the fish mixture seems too runny, you can add 1–2 tbsp of semolina and let it sit for 15–20 minutes to absorb the excess moisture. I didn’t need to do that – my mix was fine.
Step 7
Wet your hands and shape the patties to your desired form. I made mine oval, but you can shape them round (or even square).
Step 8
Heat vegetable oil in a frying pan. Place the patties in and fry for 2–3 minutes on each side until golden. Adjust the heat to avoid burning, depending on your stove.
Step 9
Serve the patties hot with any side dish – vegetables, pasta, etc. Enjoy!
