First Snow Salad
Tender and wintery, with chicken, cheese, and walnuts! First Snow Salad looks beautiful and brings a New Year’s mood to the table. It’s very easy and quick to make from simple ingredients you can buy in any store - especially handy during the pre-holiday rush.

Preparation
Step 1
How to make First Snow Salad? Prepare all the necessary ingredients. Boil the eggs over medium heat for 12 minutes and let them cool. You can cool them under running cold water - this also helps them peel more easily. Rinse the grapes and pat dry; remove any stems.
Step 2
Boil the chicken fillet (I used chicken breast) in salted water until done over medium heat. Remove the meat from the broth and place it in a plastic bag; leave it there until it cools. This keeps the cooked fillet tender and prevents it from drying out. If you boil the chicken in advance (for example, the night before), assembling the salad will take no more than 15 minutes.
Step 3
Cut the cooled chicken into small cubes and place it on the bottom of a plate, shaping it into a circle. Never use ingredients that are warm or hot in cold salads - the salad will spoil much faster.
Step 4
Spread mayonnaise over the chicken. The easiest way is to use a piping bag (or a regular plastic bag): put the mayonnaise into one corner and snip off the tip.
Step 5
Finely chop the walnuts and scatter them over the chicken layer. If the nuts were bought in bulk or at a market, warm them briefly in a skillet or microwave to reduce bacteria and microorganisms, since you don’t know how they were stored or handled.
Step 6
Cover the walnuts with mayonnaise.
Step 7
Grate the hard cheese on a medium grater and spread it in an even layer over the top and sides of the salad. Press it lightly with a dry spoon so it sticks and doesn’t cling to the spoon.
Step 8
Apply mayonnaise in a thick layer over the top and sides of the cheese.
Step 9
Peel the boiled eggs and separate the yolks and whites. Crumble the yolks and spread them evenly over the top of the salad.
Step 10
Spread mayonnaise over the top, smoothing it across the entire surface.
Step 11
Cut the black grapes in half and remove the seeds. Arrange them in a single layer on top of the salad. Spread the remaining egg whites around the sides of the salad. Of course, you can also cover the sides with grated cheese, but it has a slightly yellow tint.
Step 12
Decorate the top with cheese snowflakes, lingonberries, and herbs.
