Festive layered vegetable salad

Bright, layered, made from simple and accessible ingredients! The salad suits the whole family, both for weekdays and festive occasions. It cooks quickly. While the beets are boiling, you can prepare the rest. Best served layered - it looks more impressive that way!

Preparation
Step 1
Use either boiled or oven-baked beets. Stores also sell ready-to-use boiled beets in vacuum packs, which will save you cooking time.
Step 2
Boil or bake beets in their skin until done, cool, peel, and grate finely. If they are too juicy, squeeze lightly to avoid watery salad.
Step 3
Peel raw carrots and grate finely. If too juicy, squeeze out excess liquid. You may also use boiled or baked carrots instead.
Step 4
Grate cheese finely. Any good-quality cheese will work - hard or semi-hard.
Step 5
Rinse dried apricots and prunes, pat dry, and cut into small cubes. If tough, soak in hot water for 10-15 minutes, then drain and dry.
Step 6
Rinse and dry raisins. If very dry and hard, soak like apricots and prunes.
Step 7
Chop walnuts finely.
Step 8
Peel and finely chop garlic. Add more to taste if you like.
Step 9
In a bowl, mix grated carrots with raisins and 1-2 tbsp mayonnaise. Season with salt and pepper if desired.
Step 10
In another bowl, combine grated cheese, dried apricots, garlic, and 1-2 tbsp mayonnaise.
Step 11
In a third bowl, mix grated beets with prunes and a little mayonnaise. Season with salt and pepper if desired. Mix well.
Step 12
Place a cooking ring (Ø 14-16 cm) on a plate. First layer: carrots with raisins. Smooth gently without pressing too hard.
Step 13
Next layer: cheese with apricots. Press gently.
Step 14
Then add a layer of beets with prunes.
Step 15
Sprinkle chopped walnuts on top. Optionally, refrigerate for 30 minutes, but not too long to prevent excess juice release.
Step 16
Remove the ring before serving. Decorate as you wish - with carrot slices, fresh herbs, or walnuts. Enjoy!
