Favorite Salad

Preparation
Step 1
Prepare the ingredients. Pork tongue can be replaced with beef tongue. Instead of ham, you may use smoked pork neck, loin, or roast. Pickled mushrooms can be replaced with fried ones.
Step 2
Slice the onion into half-rings, place in a bowl, and pour boiling water over it. Add vinegar and sugar, let marinate for 10 minutes, then drain. White onion can be replaced with red or shallots, which don’t need marinating. If you don’t like onion in salads, you can skip it.
Step 3
Remove any casing from the ham and slice it into thin strips.
Step 4
Boil the pork tongue in salted water for about 1.5-2 hours until tender. Place in cold water, peel off the skin, and cut into strips.
Step 5
Boil the chicken fillet in salted water for 20-25 minutes until cooked. Cool and slice into strips.
Step 6
Remove pickled champignons from their liquid, slice into strips or quarters. If already pre-sliced, just use them as they are.
Step 7
Slice the cucumber into thin strips. It’s best to peel it so the salad has a softer texture.
Step 8
Wash, dry, and finely chop the herbs. Besides parsley, you can use any greens you like: dill, basil, cilantro, or a mix.
Step 9
In a large bowl, combine tongue, chicken, ham, marinated onion, mushrooms, cucumber, and herbs. Dress with mayonnaise and mix well. If desired, add salt and pepper, but I usually don’t season salads with mayonnaise.
Step 10
Chill the salad for 30 minutes before serving. If preparing in advance (e.g., the night before), don’t add mayonnaise until just before serving.
Step 11
Serve the salad in a mound on a pretty plate, garnish with greens. I also added fresh green peas as decoration. Enjoy!
