Evening Salad with Mushrooms, Korean-Style Carrots, and Chicken

Preparation
Step 1
Prepare the ingredients from the list. You can make the salad with boiled, fried, or smoked chicken; I use smoked breast, but you can also use thighs, drumsticks, or any fillet. Soak the prunes in warm water in advance. Use fresh cucumbers. Korean-style carrots can be store-bought or homemade. Prepare a dish/bowl for the salad.
Step 2
Rinse fresh button mushrooms (you can also use frozen or substitute other mushrooms) under running water. Chop the mushrooms and onion into medium-small pieces. Heat vegetable oil in a skillet. Sauté the mushrooms and onion in the oil until done, stirring constantly. Lightly salt the mushrooms while frying.
Step 3
Remove the skin from the chicken, take out any bones if present, and cut into small cubes. Place the chicken in the chosen salad bowl. Lightly spread mayonnaise over the chicken layer.
Step 4
Let the sautéed mushrooms and onion cool. Lay the mushrooms with onion as the next layer. You can spread a little mayonnaise on this layer too, or skip it since the mushrooms are already quite juicy.
Step 5
Finely chop the softened prunes and add them on top of the mushroom layer. Do not spread mayonnaise on this layer.
Step 6
Wash the fresh cucumbers, pat dry, and trim the ends. If the skin isn’t tough, you don’t have to peel it. Cut the cucumbers into small cubes and add on top of the prunes. Spread mayonnaise over the cucumber layer.
Step 7
Evenly layer the Korean-style carrots on top of the cucumbers. The salad is ready - decorate with fresh herbs, cucumber, or simply arrange the carrots nicely as the top layer.
Step 8
Chill the finished salad before serving. Serve it in a shared bowl, or as individual portions using a serving ring, or spoon it into dessert cups. Enjoy!
