Eggs with Green Peas

How to check if an egg is fresh? Crack it into a separate bowl. There should be no unpleasant smell. The white of a fresh egg will be clear and clean. The yolk should hold its shape, look shiny, dome-shaped, and uniform.
Preparation
Step 1
First, prepare all the necessary ingredients as listed. You’ll need large, selected eggs; if your eggs are small, use 4 instead of 3. You can use fresh, frozen, or canned peas.

Rinse and dry the peas. If using frozen peas, thaw them first and drain any released liquid. If using canned peas, remove them from the brine and dry them, but skip the frying step (step 5) and add them to the pan after the eggs in step 6.

Crack the eggs into a bowl. Add milk, salt, and ground black pepper. Whisk the mixture until smooth and until the whites and yolks are fully combined. You can replace milk with cream (10-20% fat) for a richer taste.

Finely chop the parsley. If desired, you can replace or combine it with other herbs such as dill, cilantro, green onions, or a mix of various herbs.

Heat vegetable oil in a skillet over low heat. Add the peas and sauté, stirring, for 2-3 minutes.

Pour the whisked eggs with milk into the skillet.

Cook, stirring gently, for about 3-5 minutes or longer, until the eggs are set. The exact time depends on your pan and the heat level of your stove.

At the very end, add the chopped herbs and stir. Immediately remove the skillet from the heat.

Transfer the eggs with green peas to a plate and serve. Enjoy!
