Wash the eggplants and cut off the stems. Slice them into medium pieces, not too large.

Peel the garlic and press it through a garlic press or finely chop with a knife.

Wash the dill well, pat dry, and chop finely.

Pour water into a pot, add salt and sugar. Stir, then pour in 9% table vinegar. Bring the marinade to a boil.

Place the eggplants into the boiling marinade. Cook for 7-10 minutes.

Add dill and garlic to the pot with eggplants. Bring to a boil again.

Wash and sterilize jars. I sterilize in the microwave: pour about 0.4 inch (1 cm) of water into each jar and microwave on maximum power for 10 minutes. Remove and drain the water. Pack the jars with eggplants and pour hot marinade over them.
Step 9
Add 1 tablespoon of hot, neutral vegetable oil into each jar.
Step 10
Seal the jars tightly with sterilized lids, turn them upside down, and wrap with something warm. Once cooled, store in a cool place. Enjoy your preserves!
