Eggplant Salad with Garlic and Tomatoes

First, prepare all the necessary ingredients and spices for this quick and easy summer salad made from accessible products.

To start, place a frying pan on the stove and pour in about 70 ml (1/3 cup) of vegetable oil. Heat the oil, then cut 2 eggplants into small cubes and fry them in the hot oil over high heat until golden brown, stirring occasionally.

Cut 3 small cucumbers into small cubes and place them in a large bowl.

Cut 3 medium tomatoes into small cubes and add them to the cucumbers.

Finely chop fresh herbs (cilantro, parsley, basil, dill) to taste and add them to the bowl with the tomatoes and cucumbers.

Using a garlic press, crush 2 garlic cloves into the skillet with the eggplants, stir, then transfer the cooked eggplants into a separate deep bowl and let them cool slightly.

After cooling, add the eggplants to the bowl with the chopped vegetables and herbs.

Mix all the ingredients thoroughly. Then add salt, a mix of black and red pepper to taste, and 3 tablespoons of sour cream. Mix everything again until well combined.
