Preparation
Step 1
Use kefir of any fat content; it doesn’t matter. Take refined, odorless vegetable oil. Flour quantity may vary depending on dough consistency. I used less.
Step 2
Pour kefir into a saucepan and warm on low heat, stirring constantly to avoid separation. Pour into a bowl, add baking soda, mix, then immediately add sugar and stir until dissolved. Let stand 5 minutes.
Step 3
Soda reacts with kefir’s acidity, releasing carbon dioxide, which makes the sponge rise. The mixture will increase in volume, forming a foamy top. Add vegetable oil and mix.
Step 4
Gradually sift flour into the kefir mixture to aerate and remove debris. After each addition, whisk the dough. Add a bit of vanilla at the end.
Step 5
The dough should have the consistency of thick sour cream. Some flour may remain unused.
Step 6
Prepare a suitable baking pan - springform, silicone, or glass. I used a springform with foil at the bottom. Grease lightly with vegetable oil and pour in the batter.
Step 7
Bake in a preheated oven at 180°C (356°F) for 30-40 minutes. Exact time depends on your oven. Test with a wooden skewer; it should come out dry from the center.
Step 8
Remove the sponge from the oven, cool, and take it out of the pan. Sprinkle with powdered sugar before serving. Enjoy!
