Eggless Orange Juice Cake
Tasty, easy, and simple, without eggs and milk, for the whole family! Eggless orange juice cake turns out just as light and crumbly as enriched baked goods. Semolina gives the batter a porous texture, but you do not feel it in the finished cake. It is easy to make, and the result will please everyone.

Step 1
How do you make a cake with orange juice? Prepare all the necessary ingredients. Use all-purpose flour. You can squeeze the juice from one orange and, if the amount is not enough, top it up to the required volume with store-bought juice. Or use one more orange.
Step 2
Wash the orange thoroughly with a brush to remove any dirt from the peel. Grate the zest from one orange on a fine grater. Try not to touch the white part of the peel, otherwise the batter and the finished cake will taste very bitter.
Step 3
Sift the flour. Add semolina, baking powder, sugar, and vanilla sugar to the flour. Mix all the dry ingredients with a spoon.
Step 4
Separately, in a deep bowl, mix the orange juice, vegetable oil, and wine vinegar. Stir. You can use either sunflower oil or olive oil. But keep in mind that baked goods with orange zest already have a slight bitterness on their own. Olive oil can make that bitterness even stronger. That is why I usually do not add olive oil to citrus baked goods and use refined sunflower oil instead.
Step 5
Add the flour mixture to the orange juice in portions. Mix everything until smooth.
Step 6
You should get a thick, fragrant batter. Because of the zest, the batter may be slightly bitter, but that bitterness will disappear during baking. If the batter is so thick and dense that it is hard to turn the spoon, add 1 tablespoon of oil and 1 tablespoon of juice, then mix again. Keep adding this way until the batter becomes easier to work with.
Step 7
Transfer the batter into a cake pan greased with vegetable oil and level it out. If the pan is silicone, there is no need to line it with anything. Other pans are better lined with parchment paper and greased with vegetable oil. Put the cake into an oven preheated to 180°C (350°F) for 40-50 minutes.
Step 8
Remove the finished cake from the oven, let it cool slightly, and take it out of the pan. Cut it into pieces and serve. The next day the cake tastes even better. Enjoy your meal!
