Eggless Mug Cake in the Microwave

Step 1
Instead of baking powder, you can use baking soda. If desired, you may add one egg. Use milk of any fat content.

Place cocoa powder, vegetable oil, sugar, sour cream, and milk into one bowl. You could mix everything directly in the mug, but it’s more convenient to do it in a larger bowl first.

Whisk these ingredients until you get a smooth mixture. Make sure there are no lumps of cocoa remaining.

Sift the flour together with baking powder into the mixture. It’s important to sift the flour to incorporate air, which will make the cake fluffy and help it rise well during cooking.

Mix the batter thoroughly until it becomes a slightly thick mass.
Step 6
Pour the batter into a microwave-safe mug. At this stage, you can add a couple of pieces of chocolate or some nuts into the batter if you wish. The batter should fill only about half the mug - if you fill it more, it may overflow. Place the mug in the microwave on maximum power for about 3 minutes. It’s important to keep an eye on it so you can stop the microwave if the batter starts overflowing.
Step 7
Once done, it’s best to leave the simple chocolate mug cake inside the microwave for 7-10 minutes to cool gradually and prevent it from collapsing due to a sudden temperature drop. Serve the quick cake decorated as you wish. I used powdered sugar and fresh raspberries for decoration. Enjoy your tea time!
