Preparation
Step 1
Use kefir of any fat content; old, sour kefir works best as it helps the batter rise. Bring kefir to room temperature beforehand or warm it in the microwave. Use neutral vegetable oil. Choose sweet-sour apples.
Step 2
Pour kefir into a bowl, add sugar, and whisk. Sugar dissolves quickly in warm kefir.
Step 3
Add vegetable oil to the kefir and mix.

Sift flour into another bowl. Add baking powder and a pinch of salt to enhance flavor. Mix to evenly distribute dry ingredients.
Step 5
Pour the liquid mixture into the flour and whisk until smooth. The batter should be like thick sour cream. Add more kefir if too thick.
Step 6
Wash and peel apples. Halve each apple, remove cores and stems, and slice thinly without separating the slices.
Step 7
Grease a suitable baking pan (I used a 20 cm springform). Line the bottom with parchment and grease sides. Sprinkle breadcrumbs to form a protective layer. Pour batter into the pan and level it. Arrange apple halves in a flower shape or mix them with the batter.
Step 8
Bake in a preheated oven at 350°F (180°C) for 40-60 minutes. Check doneness with a wooden skewer; it should come out dry. Cool and remove from the pan.
