How do you make egg white glaze for Easter sweet breads? Prepare all the necessary ingredients. It is best to make the powdered sugar yourself by grinding granulated sugar in a coffee grinder. It is better not to use store-bought powdered sugar, as it may contain additives that can interfere with whipping the egg whites. My egg is a large one, and it is best to use a fresh egg. Make the lemon juice yourself by squeezing a lemon.
Step 2
Take a deep bowl with a rounded bottom so the whisk can move easily. The bowl and the tools you will use for whipping must be perfectly clean and dry. Otherwise, the whites may not whip into a thick foam. Sift the powdered sugar through a sieve. This will remove any larger sugar particles that may not dissolve during whipping. Add a pinch of salt. Salt increases the volume of whipped egg white.
Step 3
Separate the egg white from the yolk. Crack the egg in the middle and divide the shell into 2 halves. Pour the egg from one half of the shell to the other until all the white runs out. The yolk will remain in the shell. Set it aside, you will not need it here. It can be used in other dishes. Separate the white from the yolk very carefully. If even a tiny bit of yolk gets into the white, the glaze will not work.

Add the lemon juice. Mix everything until smooth.

Use a blender whisk attachment or a mixer for whipping. Immerse the beaters into the mixture so it does not splash when you turn the machine on. Beat the glaze on low speed until white foam appears. The whipping time depends on the appliance you use. It took me 2 minutes with a 1500 W blender.
Step 6
Switch to high speed and whip until the mixture becomes snow-white and glossy. If you use a hand mixer or blender, move the beaters around the whole bowl while whipping so the mixture whips evenly. It will become thicker and seem to increase in volume. When you lift the whisk, the glaze should flow down slowly, forming a sharp peak. This took me 10 minutes.
