Egg Roll with Cheese and Garlic

The simplest and most original festive appetizer! Egg roll with cheese and garlic is prepared very easily from the most affordable ingredients. Its advantage is that you can change the filling according to your taste, the season, or what you have in the fridge: vegetables, mushrooms, nuts, herbs, sauces.

Preparation
Step 1
Choose cheese you like, since it sets the main flavor of the rolls. The key is that it should grate well.
Step 2
In a deep bowl, combine the eggs with 4 tablespoons of mayonnaise. Mix until smooth. You can use a mixer for convenience.
Step 3
The mixture will be uniform. No need to add salt, as mayonnaise is already salty. Optionally add ground pepper or favorite spices to taste.

Heat a skillet until hot, add a little vegetable oil, then pour in the egg batter. Cook over low heat for about 1 minute per side.
Step 5
The egg pancake flips easily.
Step 6
Place the finished pancakes onto a flat plate. I got 3 pancakes about 12 inches (30 cm) wide using a large skillet.
Step 7
For the filling, grate cheese into a bowl. Peel several garlic cloves and press them directly into the bowl. Add chopped parsley and mayonnaise. You can replace parsley with any fresh herbs you have. Mix everything thoroughly.
Step 8
Spread the cheese filling evenly over the egg pancake.
Step 9
Roll the pancake with filling into a roll. Repeat with all pancakes.
Step 10
Cut the rolls into serving pieces with a sharp knife and place on a serving dish. Enjoy!
