Egg-fried rice

Quick and delicious fried rice with peas, peppers, and scrambled eggs, tossed in soy sauce for a simple, flavorful meal ready in under 30 minutes.

Preparation
Step 1
Bring a small saucepan of water to the boil, add the peas, and cook for 1 minute. Drain well and set aside.
Step 2
Heat 1 tablespoon of oil in a large non-stick frying pan. Add the chopped bell pepper and cook over medium-high heat for 4 minutes, stirring frequently. Stir in the sliced spring onions and cook for 1 minute longer.
Step 3
Push the vegetables to one side of the pan. Add the remaining oil to the empty side and pour in the beaten eggs. Scramble gently over medium heat, stirring until just softly set.
Step 4
Add the rice and peas to the pan, then toss everything together. Continue cooking for 5-10 minutes, stirring constantly, until the mixture is piping hot. Drizzle with soy sauce, mix well, and serve with extra soy sauce on the side if desired.
