Egg-Free Flatbreads on Water
Versatile, quick, made from simple ingredients! Egg-free flatbreads on water cook in a pan from everyday staples. Soft, thin, easy to roll - great for wraps, and can be served instead of bread.

Preparation
Step 1
How to make egg-free flatbreads? Measure the ingredients. Use high-grade wheat flour. Use refined oil; olive oil works too.
Step 2
For kneading, use a roomy, tall bowl. Combine flour with salt and sift. This aerates the flour and makes kneading easier.
Step 3
Because flour absorbs differently, you may need a bit more or less. To avoid making the dough too stiff, set aside a little of the flour (20-25 g). Add it later only if needed. Make a well in the sifted flour and add the vegetable oil.
Step 4
Boil the required amount of clean water. Pour the boiling water into the flour-and-oil mixture. Stir with a spoon.
Step 5
When the water cools slightly and mixes with the flour, start mixing the dough with your hands.
Step 6
Transfer the dough to the table and knead until smooth. If needed, add a little more flour. The dough shouldn’t stick to your hands. It will be soft and elastic. Cover with plastic wrap so it doesn’t dry out, and let it “rest” for 30 minutes. During this time the gluten hydrates, and the dough becomes more pliable and pleasant to work with.
Step 7
Divide the dough into 9 equal parts and roll each into a ball. The number of pieces depends on the diameter of the skillet you’ll use.
Step 8
Roll each ball into a thin round flatbread about 2 mm thick. Mine came out about 19 cm (7.5 in) in diameter. While rolling the next one, cover the remaining balls with a towel so they don’t dry out.
Step 9
Heat a skillet over high or medium heat, depending on your stove. Don’t add anything - these cook in a dry pan. Using a rolling pin, transfer a flatbread to the hot skillet and cook for 1-2 minutes until lightly golden.
Step 10
Flip and cook the other side until done. Repeat with all the rolled flatbreads.
Step 11
Stack the cooked flatbreads and cover with a clean towel. Once they cool, they’ll become even softer - serve.
