Dumplings with Sauerkraut
Simple, appetizing, melt-in-your-mouth, and homemade delicious! Dumplings with sauerkraut are loved by the whole family. The dough in this recipe is easy to roll and work with, making dumplings perfect for everyday meals or guests.

Preparation
Step 1
Prepare the ingredients for the filling first. Use flavorful sauerkraut, preferably homemade, as it affects the taste.
Step 2
Peel and rinse the onion. Cut into small cubes.
Step 3
Heat vegetable oil in a skillet. I used olive oil, but refined sunflower oil works too. Sauté the onion, stirring constantly for 6-7 minutes until golden.
Step 4
Squeeze excess liquid from the sauerkraut through several layers of cheesecloth or with your hands. Add it to the onion in the skillet. Add 2-3 pinches of sugar, stir, and simmer over low heat with a lid for 25-30 minutes, stirring occasionally. Transfer filling to a bowl to cool.
Step 5
While the filling cools, prepare the dough. Use high-quality wheat flour. Sift to aerate. Eggs and water should be at room temperature.
Step 6
In a suitable bowl, beat the egg, add water and 1 tbsp vegetable oil. Mix with a fork and pour into the flour.
Step 7
Knead a firm, non-sticky dough. Depending on the flour, you may need more or less than specified. Cover with a towel and let rest for 40 minutes.
Step 8
Form dumplings by rolling dough into a circle and cutting circles with a cutter, or roll into a 1–1.5 cm thick log and cut slices about 6 cm wide.
Step 9
Roll each piece into a 1-1.5 mm thick circle. Place about 1 tsp of filling in the center and seal the edges carefully.
Step 10
Grease the bottom of a pot with oil to prevent sticking. Add about 3 liters of water and bring to a boil. Salt the water (0.5 tbsp). Stir in a circular motion to create a whirlpool, then add 15 dumplings. Once boiling, reduce heat to low and cook for 4-6 minutes (thicker dough takes longer).
Step 11
Remove cooked dumplings with a slotted spoon and drain. Transfer to a bowl, add butter or fried onions. Serve hot with sour cream or garlic sauce. Enjoy!
