Dumplings with Potato and Fried Onion

Preparation
Step 1
Start by preparing the filling. Wash the potatoes thoroughly. You will need 3-4 onions.
Step 2
Peel and wash the potatoes, cut into 3-4 pieces, place in a pot, cover with water, and bring to a boil. Reduce heat, add salt. Optionally, add a bay leaf and 3-4 allspice berries.
Step 3
While the potatoes cook, prepare the onions. Peel and rinse the onions, then dice them medium-sized.
Step 4
Heat refined vegetable oil in a pan. Fry the onions over medium heat until golden, stirring occasionally.
Step 5
When the potatoes are tender, drain the water. Add butter, warm milk, and the fried onions. Mash into a smooth puree. Let the filling cool while preparing the dough.
Step 6
For the dough, prepare the listed ingredients. Use high-quality wheat flour and sift it. Bring the egg to room temperature.
Step 7
Place the flour in a large bowl. In a separate container, whisk the egg with boiled water at room temperature and 1 tbsp of oil. Pour into the flour and mix.
Step 8
Knead the dough until firm and non-sticky. Cover and let rest for 40 minutes.
Step 9
Roll out part of the dough to ~3 mm thick. Cut circles with a special cutter. Place ~1 tsp of filling in the center and seal the dumplings. Optional: fold edges into a braid. Avoid getting filling on edges.
Step 10
Boil in a large pot with plenty of water (≈3 liters). Salt the water (~0.5 tbsp). Make a whirlpool and add 15 dumplings. Once boiling, reduce heat and cook 4-6 minutes. Thicker dough requires longer boiling.
Step 11
While dumplings cook, prepare toppings. You’ll need 3 medium onions, vegetable oil, and butter.
Step 12
Peel and thinly slice the onions. Fry in oil until golden.
Step 13
Remove cooked dumplings with a slotted spoon, drain excess water, place in a bowl, add butter and fried onions, and shake with the lid closed to coat evenly.
