Dumplings with Butter

Preparation
Step 1
Prepare the ingredients. I used homemade minced pork and beef with onions, but you can use store-bought or make your own. Any meat, such as chicken, turkey, pork, or beef, will work. Use 6% or 9% table vinegar—it won’t be noticeable in the final dish but helps make the dough more elastic. The butter should be high quality and well-chilled before use.
Step 2
Pour the flour into a bowl and mix it with salt. Add vinegar, neutral vegetable oil, and water. Gradually add the water while stirring to assess the dough’s consistency. Start mixing with a fork, then continue kneading with your hands.
Step 3
Transfer the dough to a floured surface. Knead for about 10 minutes, adding flour if needed, until smooth and uniform. The dough should barely stick to your hands.
Step 4
Wrap the dough in plastic wrap and let it rest for 30 minutes. During this time, the flour will absorb the liquid, and the gluten will develop, making the dough more elastic. Meanwhile, prepare the filling by grinding the meat and onion through a meat grinder. Season with salt and pepper.
Step 5
After 30 minutes, cut a piece of dough and roll it out into a 2–3mm thick sheet. Sprinkle flour on the surface if necessary.
Step 6
Cut out circles using a suitable mold, such as a glass. Place a small portion of meat filling in the center of each circle. Cut the butter into 1 cm cubes and place one or two cubes in the center of the filling.
Step 7
Shape the dumplings traditionally: fold the dough over the filling to form a half-moon and seal the edges. Then connect the two ends and press them together. Place the prepared dumplings on a floured surface. You can freeze them or cook immediately.
Step 8
Boil the dumplings in a large pot of salted water, stirring to prevent sticking. Cook for about 5 minutes after the water starts boiling. Serve with sour cream. Enjoy your meal!
