Preparation
Step 1
Sift the flour through a sieve to enrich it with oxygen. Do not skip this step - it makes the dough lighter. Warm the water until lukewarm (about 100°F / 38°C).
Step 2
Take a large bowl, add about 2/3 of the flour. Do not add all at once - amount may vary depending on flour and egg size. Save some to adjust consistency later. Add salt and sugar.
Step 3
Make a well in the center, crack in the eggs, then pour in vegetable oil.
Step 4
Next, pour in the warm water and begin mixing the dough.
Step 5
At first, use a wooden spatula to mix. Gradually the dough will come together. If needed, sprinkle a little more flour. Continue kneading by hand.
Step 6
The finished dough should be soft and not sticky. Shape into a ball, cover, and let rest for 10-20 minutes. This allows gluten to develop, making the dough elastic.
Step 7
Knead the rested dough lightly again and start shaping pirozhki with any filling you like. The dough is easy to work with. Form small pirozhki and fry over low heat on all sides… or bake them in the oven!
