Preparation
Step 1
Preheat the oven to 190C and grease a 20cm/8in cake tin, lining it with baking paper.
Step 2
Using an electric mixer, beat together the butter, caster sugar, light brown sugar, nutmeg, cinnamon, salt, and vanilla extract until the mixture becomes pale and fluffy. Add the eggs one at a time, beating well after each addition to ensure a smooth batter.
Step 3
In a separate bowl, mix the flours, baking powder, and a pinch of salt. Gradually fold the dry ingredients into the butter mixture with a spatula or wooden spoon, making sure everything is evenly combined without any streaks of flour.
Step 4
Toss the apple pieces in cornflour until evenly coated, then fold them gently into the cake batter. Spoon the mixture into the prepared tin and smooth the top. Sprinkle generously with brown sugar for a crisp, golden crust.
Step 5
Bake for 45 minutes, or until a skewer inserted into the center of the cake comes out clean. Remove from the oven and allow to cool completely in the tin before serving. Enjoy as is, with a warm cup of tea, or drizzled with cream.
