Dorayaki Japanese Pancakes

Preparation
Step 1
Take eggs out of the fridge in advance or place them in warm water for a few minutes - pancakes will be fluffier. Use liquid honey; if thick or crystallized, melt it first. For filling, sweetened condensed milk is used.

Crack eggs into a bowl. Add sugar and whisk. Mix in honey and stir well.

Pour in room-temperature water and mix.
Step 4
Sift flour and baking powder to remove debris and aerate the flour for fluffier pancakes.
Step 5
Stir in flour until smooth. Adjust the amount based on desired batter consistency; it should be thick but pourable like sour cream.

Heat a non-stick pan over high heat. Grease lightly with neutral oil only for the first pancake. Pour batter carefully, forming a round pancake. Japanese pancakes are usually small.
Step 7
Reduce heat to medium. Fry until golden on one side, then flip to the other. You can cook several pancakes at once for convenience.
Step 8
Stack pancakes in pairs, spreading sweetened condensed milk between them. Traditional fillings include sweet bean paste, chocolate spread, jam, or regular condensed milk.
Step 9
Serve dorayaki immediately. Enjoy!
