Delicious Braised Pork Ribs with Vegetables on the Skillet

Preparation
Step 1
If ribs are frozen, remove from freezer in advance and thaw at room temperature. For a spicy dish, add chili peppers with bell peppers.
Step 2
Rinse and pat dry the ribs. Cut into portions. Peel carrots and onion. Halve bell pepper, remove seeds. Wash all vegetables in cold water.
Step 3
Slice onion into rings or half-rings, pepper into strips or half-rings. Cut carrots into sticks or slices. Slice tomatoes; I used two medium tomatoes and several cherry tomatoes.
Step 4
Heat vegetable oil in a thick-bottomed skillet. Fry ribs on high heat until browned on one side, then flip and cook until golden on the other side.
Step 5
Add prepared vegetables, season with salt, and mix. Optionally, add peeled garlic cloves. Reduce heat to low, cover, and simmer ribs for about 30 minutes. Check occasionally and add a little water if needed.
Step 6
Add tomatoes and dry seasonings (I used mixed ground peppers). Cover and simmer on low for 30 minutes. Tomatoes release juice, creating a flavorful sauce. If too little liquid, add 20-50 ml water.
Step 7
At the end, uncover. If too much liquid, increase heat to evaporate some. Optionally, leave the sauce as is - it’s aromatic and complements the ribs. Sprinkle with fresh herbs before serving.
